Ingredients
½ cup of sugar
8 eggs
¼ teaspoon of tartar cream
¾ cup of unsalted butter
12 ounces of chopped semisweet chocolate
½ teaspoon salt
85g of cocoa powder
160g golden caster sugar
Recipe procedures
Step 1. Grease the cake tin and mixing the chocolate with butter
You’ll need to grease a cake tin, approximately 23 cm in size, then line the tin with greaseproof paper. After that, melt the chopped chocolate and butter. It’ll be good to melt the butter and chocolate in the heatproof bowl; however, you shouldn’t touch the bowl while melting the mixture. Then place the bowl in a pan full of simmering water, stir the mixture until it’s smooth, after which set it aside and allow it to cool slightly.
Step 2. Mix the egg yolk, sugar, and cocoa powder
Place the sugars, both the caster and the brown sugar, in the food processor and whisk until it doubles the volume. After that, turn off the food processor machine, then, on top of the mixture containing eggs, sift the cocoa powder. It’s important to sift the powder on top of the mixture, avoid dumping it in as it leads to lumps in the mixture. After which, add some salt and mix with the mixture. While mixing, you’ll need to do it gently and at a slower speed to ensure all the cocoa powder mixes well without having some lumps.
Step 3. Place the white eggs in another bowl
After mixing the egg yolk, cocoa powder with the sugar, it’ll be good to take another large bowl and place the eggs white. Then whisk the egg whites to a soft peak stage. While whisking, you need to ensure you do it at a lower speed.
Step 4. Fold the chocolate you had melted with the mixture from the egg yolk
You’ll need to carefully fold the mixture of the melted chocolate and fold it inside the mixture containing the egg yolk. Then onto the mixture, fold one-third of the mixture with the eggs white. The addition of the egg’s white mixture will help loosen the mixture before folding the rest in carefully. You’ll have to fold the mixture until it’s not getting streaky anymore. Lastly, if you wish, you can sprinkle some cocoa nibs on top of the mixture.
Step 5. Bake the mixture
After making the mixture, spoon it into the greased tin and place it in the oven to bake. It can take 40-50 minutes to bake the cake completely. After that time, you can choose a suitable wire rack to allow the tin to cool before removing the cake.
After cooling the cake, your flourless chocolate cake is now ready to serve with any drink or with something tart like a crème fraiche.
